blueberry muffin morning
Instead of a lullaby last night, he got promises of baking his own muffins in the morning.
Luckily, he slept in while I did an early grocery run.
Otto's Blueberry Muffins
makes 12 small (just under 2 ounces each) muffins
Add Wet to Dry and stir only enough to combine.

Preheat
oven to 400°.
Line muffin tins with paper cups.
BATTER:
DRY whisk together in
one bowl:
1 cup King Arthur white whole wheat flour
1 ½ t
baking powder
½ t sea salt
2 dashes
ground nutmeg
WET combine in a
second bowl:
1 large
egg, beaten
3 T
unsalted butter, melted
1/3 cup
dark brown sugar, packed
¼ cup 1%
milk
¼ cup
plain whole milk yogurt
1 cup
fresh blueberries
Add Wet to Dry and stir only enough to combine.
TOPPING in a glass measuring cup melt
2T
unsalted butter
Add
following and mix with fork until comes it together in clumps:
¼ cup
rolled oats
¼ cup AP
flour
2T
cinnamon sugar
2
pinches sea salt
Put
about 1 heaping Tablespoon of batter in each lined cup. (The cup should be no
more than half full.)
Sprinkle with a generous amount of topping.
Bake
13-15 minutes until just turning brown at edges and fork comes out clean.

Summer Soccer Skills and Drills
This week the grass was baked until crispy. Monday, the clover was so lush, that flip-flops were banned because of the number of bees. By Friday, it crunched under foot.
He did make the shot. And being the last day, there were popsicles for all.
